Protected Designation of Origin (PDO): products whose quality or characteristics are due to the geographic area including its natural and human factors, and whose production, transformation and preparation are always carried out in that geographic specific area from which their name is taken (e.g., Cabrales cheese, Guijuelo Iberian ham, mussels from Galicia, Casar cheesecake, cider from Asturias...).

Protected Geographical Indication (PGI): products with a certain quality or reputation or any other characteristic that can be attributed to their geographic origin and whose production, transformation or preparation is done in the specific geographic area from which their name is taken (e.g. Galician boiled ham, asparagus from Navarre, meat from Ávila, “ensaimadas” (sweet pastries) and “sobrasada” (chorizo pâté) from Mallorca, nougat from Jijona and Alicante…).

Traditional Specialty Guaranteed (TSG): products with specific features that distinguish them from other foods belonging to the same category. They must be produced from traditional raw materials or have a traditional or artisan composition, or production or transformation method: Serrano (mountain) ham, certified farm-produced milk, “panellets” (traditional sweets from Catalonia) and crisp bread made with oil.

Organic farming: products that are produced using ecological farming or livestock-rearing techniques without the use of chemicals such as pesticides, fertilisers or medicines, respecting the natural growth rate of plants and animals and made without adding artificial substances such as additives, colorants, flavour-enhancers or aromas.
